1. Bal Mithai
Bal Mithai has been made and eaten in Uttarakhand for centuries. Bal Mithai is prepared from milk. Mawa is prepared by cooking milk. After this, ghee, mawa and sugar are added and it is cooked till it becomes thick. After cooling, it is put on a plate and small balls of sugar are put on it and in this way Bal Mithai is prepared.

Arse or Arsa is eaten with great fondness in the Garhwal division of Uttarakhand. It is a popular sweet dish of the Garhwal region. It is made at home. Even today it is made in wedding ceremonies. Arse is made from rice flour, ghee, jaggery, sesame and milk. Nowadays Arse is also available in shops.

3. Rot
Rot is made in both Kumaon and Garhwal. In the mountains, rotis are definitely made in auspicious occasions. Its dough is prepared from atta, maida, semolina, jaggery and dry fruits. After this, they are fried. Its outer layer is very crispy. In the mountains, it is mainly eaten in winters.

4. Dates
Dates are made in Kumaon, Uttarakhand. They are made from wheat flour, semolina, fennel and jaggery. All these are mixed and then the dough is made.

After which it is rolled out like a thick roti and then cut into triangles. After leaving it for a while, it is fried. Even today these are made in Kumaon. Especially when a daughter comes to her parents’ home, these are made here and sent to her in-laws’ house.
